I love making flatbread because I can always add whatever toppings I like! This is a grilled variation, which cooks very quickly once you make the dough! I’m giving one example of a topping combination, but definitely get creative with it!
yield: 4 flatbreads
see pita bread recipe (previous post) for ingredient amounts for the dough
desired toppings (I used basil, tomatoes, toasted pine nuts, salt, black pepper, olive oil, and balsamic reduction)
prepare the dough and let rise as described in the pita bread recipe (previous post).
cut the dough into four equally sized portions and roll out as thin as possible into an oval shape. cook on a hot grill or grill pan for a minute or two on each side or until grill marks form and the bread is cooked throughout. add desired toppings, remove from the grill, cut, and enjoy!
