Like most people, I love hummus! It’s super versatile and easy to make! This hummus is great as a dip for vegetables, with pita, or in sandwiches and wraps. You can add herbs to it or roasted peppers for an added dimension of flavor. Today, I added roasted red peppers and cayenne to half the batch to make roasted red pepper hummus!

1 can of chickpeas, drained (15oz)

2 tablespoons lemon juice

1 tablespoon olive oil

3 tablespoons tahini (sesame seed paste)

1 teaspoon salt

3-4 tablespoons hot water

sesame seeds (optional, for garnish)

paprika (optional, for garnish)

combine chickpeas, lemon juice, olive oil, tahini, salt in a blender or food processor. add half the water and blend. continue to add water and blend until desired consistency is reached.

put the hummus in a bowl, drizzle with olive oil and sprinkle on sesame seeds and paprika if desired and enjoy!
