This recipe features Hellman’s Carefully Crafted Dressing & Sandwich Spread, which is delicious and free from eggs, cholesterol, and artificial colors/flavors.
This recipe is as easy as combining everything in a bowl! It’s versatile, as you can enjoy it on its own or in a sandwich as I made here.
Yield: 1-2 servings
1 cup canned chickpeas, rinsed and drained
2 tablespoons minced celery
1 tablespoon minced red bell pepper
2 teaspoons finely chopped capers
2 tablespoons Hellman’s Carefully Crafted Dressing & Sandwich Spread
2 teaspoons coarse ground mustard
2 teaspoons finely chopped fresh dill
1 teaspoon lemon juice
Salt and pepper to taste
Arugula (or desired greens)
Begin by mashing together the chickpeas in a bowl with a fork. Add the remaining ingredients and stir well to combine. Adjust seasoning to taste then serve immediately or chilled. If making a sandwich, simply serve on sliced bread with greens.
