Baked truffle fries! Happy Monday!

Vegan daal makhani! Creamy black lentils (urad daal) and kidney beans finished with cashew cream and cilantro. This was my first time making this classic North Indian dish and it did not disappoint! I’ll work on writing up a recipe next time I make it. Happy Thursday!

My take on spanakopita! Phyllo pie packed with spinach and tons of fresh herbs- parsley, dill, and mint!
